Lemon Roast Potatoes & Carrots
Marinade for approx 5 carrots and 10 potatoes halved.
1/3 cup fresh lemon juice
3 cloves garlic crushed
1/2 tsp black pepper
1 tsp dried oregano
2 tbs olive oil
1 tsp sea salt
1 tsp fennel seeds
Nuts & Bolts
For best result par boil potatoes first.
Add all ingredient to a mixing bowl and mix. Add potatoes and carrots coat vegetable well.
Add to baking dish and cook.
