Sausage & Butter Bean Casserole
Serves 4
6 large thick sausages
1 tbs olive oil
1 onion chopped finely
2 cloves garlic
1 medium size capsicum sliced
3 sprigs thyme
1 tsp oregano
1 chilli finely sliced
1 tbs brown sugar
1 can diced tomatoes
1 carrots sliced
1 can butter beans
2 cups chicken stock
season to taste
Nuts & Bolts
1. in a large pot on medium heat add oil and onions cook for 4 minutes. Add sausages and capsicum cook for 3 minutes. Add garlic, thyme, oregano, chilli and carrots cook for 2 minutes. Add tomatoes, sugar and stock mix well simmer for 20 minutes.
2. Add butter bean and cook for a further 10 minutes. Season to taste.
