Cauliflower Rice Sushi
Serves 2
400g cauliflower florets quartered
3 nori sheets
100g smoked salmon
1/2 avocado
1/4 cucumber cut into thin battens
1/4 carrot cut into thin battens
2 spring onions quartered ( green part only, cut length ways
2 tsp coconut oil
2 tbs sushi dressing
soy sauce for dipping
Nuts & Bolts
1. Prep all the filling first. Cut smoked salmon into strips, cut cucumber, carrot, avocado and spring onions set aside for later.
2. Place cauliflower in food processor and blend until resembles rice.
3. In a frying pan on medium heat place oil and melt. Add cauliflower and fry for 4-5 minutes. Remove from heat and place into a bowl to cool slightly.
4. Add sushi dressing into the rice and mix well. Leave rice to cool.
5. Place nori sheet onto a bamboo sushi mat shinny side down. Place cauliflower rice onto mat cover nori completely leaving a 1 cm space with no rice on the end furthers away from yourself.
6. Fill sushi with filling. Place a small amount of water with your finger on the end of the nori where there is no rice. Roll sushi, the water will help to seal the nori closed.
