Homemade Ricotta Cheese
Homemade Fresh Delicious Ricotta Cheese
8 cups full cream milk
1 1/2 cup cream
pinch salt
3 tbs lemon juice
1. In a large pot add milk and salt, bring to the boil. Once boiled turn heat to low, and simmer for 5 minutes.
2. Turn heat off. Add cream and lemon juice, gently sir for 2-3 minutes. Curds will separate from the whey.
3. Using some muslin cloth over a strainer, strain curds. Let sit and drain for a couple of minutes. Place ricotta into a bowl, cover and refrigerate.
Ricotta can be eaten straight away whilst warm. Add a drizzle of honey fruit and nuts. Delicious.
