(Maakoud) Potato Patties
Serves 4
5 medium potatoes boiled and mashed
1 small brown onion finely diced
1 1/2 tbs fresh chives finely chopped
1/3 cup fresh coriander finely chopped
1/2 tsp cumin powder
1 tsp salt
1/2 tsp cracked black pepper
1 egg
3 tbs flour
flour for rolling patties
oil for frying
Nuts & Bolts
1. In a large mixing bowl add potatoes, onions, chives,
coriander, cumin, salt, pepper, egg and flour mix until all combined.
2. Pour some flour into a shallow bowl. Using a spoon scoop out a portion of the potato mixture and drop into the flour. Gently roll the mixture into the flour. With your hands gently mould into a flat patty. Repeat this process until all mixture has been used.
3. In a frying pan on medium heat add oil and carefully transfer the patties to the pan.Once you see the edges starting to turn golden brown, gently turn over and cook the other side. Once cooked remove from pan and drain on paper towel.
