Tomato and Mushroom Penne
500g penne pasta
1 tbs olive oil
1 onion finely chopped
2 gloves garlic
2 cups sliced mushrooms
1/4 tsp dried oregano
1 tbs pimento sweet
400g can chopped tomatoes
200ml water
1/2 tbs brown sugar
salt and pepper
Nuts & Bolts
1. In a large pot of salted water on high heat bring water to the boil. Cook penne to the packets instructions.
2. In a large pan on medium - high heat add oil, onions and garlic, cook for 3-4 minutes. Add mushrooms and cook for 3 minutes.
3. Add tomatoes, oregano, pimenton, sugar, water and season to taste. Mix well. Turn heat to low - medium and simmer for 15 minutes.
4. Once pasta is cooked strain of water. Add cooked pasta to mushroom sauce and mix.
Ready to serve.
