Coriander and Lime Rice

Coriander and Lime Rice

Serves 4

1/2 tbs butter
1 small brown onion finely chopped
1 clove garlic finely chopped
1/2 red chilli finely sliced
1 cup rice
2 cups chicken stock
1 tsp lime zest
2 limes juiced
1/2 cup fresh coriander finely chopped
salt and pepper

Nuts & Bolts

1. In a large pot with lid on medium heat add butter, onion, garlic and chilli, cook or 4 minutes or until onion is soft.

2. Add rice and cook for 1 minute stirring though the onion mixture.

3. Add chicken stock and lime zest. reduce heat to low, place lid on pot and cook until all stock has been absorbed.

4. Using a fork fluff up the rice. Add juice of limes, coriander and season to taste. Mix well.
