Couscous Lemon Chicken

Serves 4

1/2 tbs olive oil
3-4 chicken fillet or 6-8 chicken thigh fillet
salt and pepper

1 brown onion finely sliced
1 red chilli finely sliced
3 cloves garlic
1 tsp cumin powder
1 tsp coriander powder
1 tsp paprika
1 cup pearl couscous
1 1/2 cups chicken stock
zest of 1 lemon
juice of 1 lemon
1 spring onion finely sliced
1/3 cup fresh coriander finely chopped

Nuts & Bolts

1. In a large frying pan with a lid, on medium - high heat add oil and seasoned chicken cook chicken on one side for 2 minutes then turn over.

2. Turn heat down to medium, add onion, garlic and chilli and cook for 4 minutes. ( add extra oil if dry ).

3. Add cumin, coriander and paprika cook, mix for 1 minute.

4. Add couscous , chicken stock, zest and lemon juice, mix well. ( make sure all couscous is covered with stock and not on top of the chicken pieces). Turn heat to low, cover with lid and simmer for 8 minutes or until couscous is cooked and tender.

9. Once cooked garnish with spring onion and fresh coriander.
