Fried Rice
2 tbs peanut oil
3 eggs whisked
3 shallots halved and finely sliced
2 garlic cloves finely diced
80g diced bacon
1 cup capsicum finely chopped
1 cup peas
1 cup bean sprouts
2 tablespoons Chinese rice wine (Shaoxing)
2 cups cooked Jasmine rice
1½ tablespoons soy sauce
1 tablespoon dark soy sauce
salt, to taste
Nuts & Bolts
1. Heat oil in wok over high heat until just starting to smoke. Add egg and break up using a whisk. Cook until egg is slightly golden on edges then remove and set aside.
2. leaving oil in wok. add shallots, capsicum and garlic to wok and cook for a minute until translucent.
3 . Add bacon, beans spouts and peas cook for 2-3 minutes until lightly golden. Add rice wine and cook for ten seconds then toss through cooked rice and reserved egg.
4. Stir through sauces until well combined and season with salt and pepper to taste.
