Sweet Potato Salsa

Serves 4

300g sliced 1cm thick pieces sweet potato

1 avocado cut into pieces

1 clove garlic finely chopped

1 red chilli finely sliced

1/2 red onion chopped

1/2 yellow capscium chopped

2 medium tomatoes chopped

1/2 cucumber chopped

1/2 bunch fresh coriander chopped

1 tbs olive oil

1/2 tbs balsamic vinegar

1/2 tbs lime juice

salt and pepper

Nuts & Bolts

1. Heat a grill pan on medium heat, cook sliced sweet potato  for 5 minutes each side. Remove from grill pan and set aside to cool.

2. In a mixing bowl add all the remaining chopped ingredients. Add sweet potato, olive oil, balsamic vinegar, lime juice and season to taste. 

Mix all ingredients well.
