Duck Ragu With Risoni

Serves 4

300g cooked duck meat
1/2 tbs olive oil
1 onion finely chopped
2 cloves garlic finely chopped
1 red chilli finely sliced
2 sprigs fresh thyme
1/2 cup white wine
1 tsp dried oregano
1 tsp paprika
1 tbs brown sugar
1 tin 440g diced tomatoes
1 cup water
1/2 cup dried Risoni
salt and pepper

Nuts & Bolts

1. In a large frying pan on medium heat add oil, onion and garlic, sweet for 5 minutes. Add chilli, thyme and white wine and reduce down to half.

2. Add tomatoes, paprika, oregano and sugar cook for 4 minutes.

3. Turn heat to a simmer and add water duck meat and simmer for 25 minutes.

4. Add Risoni and season to taste. Cook for a further 15 minutes or until Risoni is tender.
