Rosemary & Mushrooms Chicken with White Wine
Serves 4
500g Chicken thigh fillets cut in half
1/2 tbs olive oil
1 cup white wine
1 onion sliced
2 cloves garlic chopped
1 red chilli finely sliced
2 sprigs fresh rosemary
2 cups mushrooms
3 large tomatoes chopped
Nuts & Bolts
1.In a large frying pan on medium to high heat add oil and chicken fillets. Brown both sides of the fillets. Take of heat and set aside for later.
2. In the same frying pan add onion, garlic and chilli and cook until onions are soft. Add mushrooms and cook for 2 minutes.
3. Add wine and reduce down by half. Add tomatoes and rosemary, cook for a further 7 minutes.
4. Season to taste add chicken and simmer for 10 minutes.
Ready to serve.
