Chicken & Vegetable Sausage Rolls
Mixture make 40 small sausage rolls
600g chicken mince
2 carrots grated
1 medium brown onion grated
2 cloves garlic crushed
1 red chilli finely chopped
1 zucchini grated
2 tbs fresh chives finely chopped
1/4 cup breadcrumbs
1 spring thyme
1 beaten egg
4 sheets puff pastry
1 beaten egg for brushing pastry
season with salt and pepper
2 tbs sesame seeds
1. Preheat oven to 200°C. Line 2 baking trays with baking paper.
2. Mix chicken, onion, garlic, carrot, chilli, chives, thyme, zucchini and breadcrumbs . Beat 1 egg and add to mince mixture. Add seasoning. Divide mixture into 8 equal portions.
3. Cut pastry sheets in half. Place a mince portion down the centre of pastry. Beat remaining egg and brush edges.
4. Roll up to enclose filling, and cut into 5 pieces. Place on trays, seam side down. Brush with egg and sprinkle with sesame seeds. Bake for 30 minutes until golden.
