STORING DRIED SPICES

Both whole and ground spices should be stored in airtight containers in a cool  and dark cupboard, as light, moisture and heat lessens their quality.

Most ground spices lose their flavour, colour and aroma within 5 or 6 months.

Whole spices will keep for 6 months or more if stored correctly.

If spices smell musty, or if there is little aroma , it is likely that the flavour  will be impaired too.

It's a great idea to label new jars of spice with  the date of purchase.
