Chicken & Cabbage Spring Rolls

350g chicken mince
1/4 Chinese cabbage shredded
2 spring onions finely sliced
1 carrot peeled, grated
1 red chilli finely chopped
1 clove garlic crushed
1 tsp ginger crushed
1 zucchini grated
1/4 cup chopped coriander
1 egg
salt and pepper
Nuts & Bolts
1. Pre heat oven to 200c. Line baking tray with baking paper.
2. In a bowl add mince, cabbage, spring onions, carrot, chilli, garlic, ginger, zucchini, coriander and egg. Combine mixture well.
3. Wrapping spring rolls : Corner of wrapper facing you. Place 2 tablespoons of mixture in middle of wrapper. Fold corner over filling then fold sides and roll tightly to enclose. Brush remaining corner with water to seal. Place seal side down on baking tray. Once all mixture has been rolled and place on tray, spray each spring roll with cooking oil.
4. Place in oven and cook for 25-30 or until crispy and golden brown.
Serve with a dipping sauce
