Char grilled vegetables and Smoked Salmon Salad
SERVES 4 PEOPLE
1 tbs olive oil
1 tsp minced garlic
1 medium eggplant sliced 1/4 inch thick
1 zucchini sliced 1/4 inch thick
2 medium potatoes sliced 1/4 inch thick
5 asparagus sticks cut in half
1 red capsicum cleaned and thickly sliced
4 long red chillies cut in half(leave seeds in)
Season to taste
1/2 cup olives
200g smoked salmon
1. In a large mixing bowl add oil, garlic, eggplant, zucchini, potatoes, asparagus capsicum, red chilies and season. Using your hand mix all the oil and garlic into all the vegetables.
2. Using a grill pan or BBQ, on medium - high heat place vegetables on grill and char on both sides.
3. Once all vegetable have been charred, place into a large mixing bowl. Add olives and smoked salmon. Mix well.
Add a drizzle of olive oil if required.
