Chicken mushroom and Tomato soup
Serves 4
1/2 tbs olive oil
1 brown onion roughly chopped
2 clove garlic chopped
1 long red chilli sliced
500g chicken thigh cut into pieces
2 sticks celery chopped
2 large carrots chopped
2 cups sliced mushrooms
1 400g can cherry tomatoes
4 sprigs thyme
1/4 cup fresh parsley finely chopped
2 cups chicken stock
1 Lt water
1 tsp pimenton sweet
1/2 tbs vegeta
1/2 cup Risoni ( pasta )
salt and pepper
Nuts & Bolts
1. In a large pot on medium heat add oil, onion, garlic and chilli, cook for 3 minutes.
2. Add chicken pieces, cook for 4 minutes. Add celery, carrots and mushrooms and cook for 3 minutes.
3. Add cherry tomatoes, thyme, parsley, stock, water, pimenton and vegeta, cook for 5 minutes.
4. Add Risoni an season to taste. Turn heat to low and simmer for 15 minutes or until Risoni is tender.
