Mixed Berry Sorbet
700g mixed frozen berries
1 cup caster sugar
1 vanilla bean split length ways, seeds scraped
2 egg whites
Nuts & Bolts
1. Place the berries, sugar, and vanilla pod and seeds in a saucepan over low heat and stir until the sugar dissolves.
2. Increase the heat to medium-low and simmer for 4 minutes or until thickened slightly. Set aside to cool for 20 minutes.
3. Pour the mixture into a plastic container and freeze for 4 hours or until the sides begin to firm.
4. Place the sorbet in a food processor and process to break up the ice crystals.
5. return to the plastic container and freeze for a further 2 hours.
6. Place the sorbet in a food processor with the egg whites and process until the mixture is combined.
7. Return the mixture to the plastic container and freeze for 4 hours or until firm.
