Wild Mushroom Tomato and Noodle Soup
Serves 4
8 cups chicken stock
1 cup dried wild mushrooms
2 sticks celery sliced
2 cloves garlic
3 peppercorns
1 small piece ginger sliced
1 star anise
1 can chopped tomatoes
1 tbs Maggi Asian seasoning
2 cups small pasta
1/2 cup fresh chopped coriander
Salt and Pepper

1. In a large pot on medium heat add, chicken stock, mushrooms, celery, garlic, peppercorns, ginger, star anise, tomatoes and maggi seasoning. Simmer for 20 minutes.
2. Add pasta and cook until Al Dente. Stir through fresh coriander. Season to taste.
