Creamy Bacon & Cheese Gnocchi

400g potato gnocchi
1 clove garlic crushed
5 spring onions finely sliced
140g medium-flavoured soft cheese,
1/2 cup low fat cream
80g smoked bacon chopped
salt & pepper

Nuts & Bolts

1. In a large pot add salted water and bring to the boil for the gnocchi.

2. Meanwhile in a large pan on medium to low heat add olive oil, garlic, bacon and spring onions cook until soft. Add soft cheese, cream and leave to melt over a medium to low heat.

3. Tip the gnocchi into the boiling water and cook for about 3 minutes, until they rise to the surface.

4. Skim the gnocchi from the pan with a draining spoon, stir into the cheese mixture. Season to taste.
