White Wine lamb Casserole
One pot wonder
1 tbs olive oil
2 cloves garlic roughly chopped
1 medium onion sliced
1/2 capsicum sliced
9 lamb loin chops
1 large tomato cubed
1/2 cup white wine
1/2 tsp dried oregano
3 small potatoes cubed
salt and pepper

Use a frying pan that can be transferred to the oven to complete the second process of cooking.
Preheat oven to 190c
1. In a frying pan on medium heat add oil, onion and garlic cook for 4-5 minutes or until the onion is translucent. Add capsicum and cook for 2 minutes. Add lamb loin chops and mix around, cook for 3 minutes.
2. Add white wine and cook for a further 4 minutes. Add tomatoes, oregano, potatoes and season to taste.
3. Turn heat off. Place a piece of foil over the top of the pan, place in the oven for 20 minutes.
4. After 20 minutes remove foil and cook for a further 15-20 minutes to caramelize the top. Once potatoes are cooked the dish is ready.
