Moroccan Pork Kebabs
400g diced pork
1-2 tsp olive oil
1/4 cup coriander
1 medium onion roughly chopped
2 tbs fresh mint
1/4 cup fresh parsley
pinch of cayenne pepper
1/tsp cinnamon
2 tsp paprika
1/ tsp white pepper
1/2 tsp salt
1 tsp cumin powder
1 red chilli roughly chopped
2 cloves garlic
1 small egg
8-12 thick skewers ( I usually use a pair of wooden disposable chop sticks )
Nuts & Bolts
1. Place diced pork and all the above ingredients into a food processor and blend into a paste, still leaving a bit of texture.
2. Using your hand grab an handful of mixture and mould onto skewers, do this until all mixture has been used. Place in the refrigerator for 30 minutes. ( wet hands will make this process easier).
3. In a frying pan on medium heat add oil, place in kebabs cook for 2 minutes on each side or until pork is cooked.
