Wild Mushroom Broth with Beef & Noodles
15g dried wild mushrooms
2 cups water
2 cups beef stock
1 clove garlic
5g piece ginger
1/2 spring onion finely sliced
2-3 slices of red chilli
65g egg noodles
150g piece of beef
Nuts & Bolts
1. In a medium size pot add water, beef stock, mushrooms, garlic and ginger. Cook on high heat, bring to a boil. reduce heat and simmer for 15 minutes.
2. In a frying pan on medium to high heat sear meat for 1-2 minutes on each side or until cooked. Set aside to rest.
3. Add egg noodle to broth and cook for 5 minutes.
4. Serve : noodles, broth, beef and sprinkle over spring onion and chilli.
