Chunky Eggplant Dip

2 eggplants roasted
1/2 red onion finely diced
2 ripe tomatoes finely diced
1/2 cup fresh parsley finely chopped
1/2 red chilli finely chopped
2 cloves garlic crushed
1/4 cup olive oil
1 tbs lemon juice
salt and pepper

 

Nuts & Bolts

1. Stab eggplant with a fork all over. Grill eggplant over a low flame until charged and tender. Set aside to cool.

2. Coarsely chop eggplant flesh and combine with olive oil in a bowl. Stir in remaining ingredients and season to taste.
