Prawn Noodle Salad

400g cooked shelled prawns
160g thin noodles (cooked)
1 large carrot finely sliced
3 spring onions finely sliced
1 cucumber shredded
1/2 cup fresh coriander finely chopped
1 red chilli finely chopped
1/4 cup dried shallots
1/4 cup crushed cashews
3 tbs french dressing

Nuts & Bolts

1. Place noodles in a bowl and cover with boiling water. Once noodles are tender drain water.

2. In a large mixing bowl add all the ingredients and mix well.
