Tabbouleh Salad

4 large ripe tomatoes finely diced
1 Lebanese cucumber finely diced
1/4 cup fresh mint finely chopped
1 cup fresh parsley finely chopped
3 spring onions ( green part ) finely sliced
1 tbs olive oil
2-1/2 tbs fresh lemon juice
salt and pepper

1/2 cup dried burghul
boiling water

Nuts & Bolts

1. In a jug add burghul and cover with boiling water. Stand for 10 minutes.

2. In a large mixing bowl add all salad ingredients and burghul add olive oil and lemon juice mix well. Season to taste.
