Tzatziki

1 kilo Greek yogurt
4 cloves crushed garlic
1/3 cup chopped fresh mint
1 cucumber diced into small cubes
1 tbs lemon juice
1 tsp lemon zest
1 tbs good quality olive oil
salt and pepper

 

Nuts & Bolts

1. Place strainer with muslin cloth inside a larger bowl. Place Greek yogurt on top of the muslin cloth tie ends together loosely, place in the refrigerator
for 1/2 hour to strain all the excess juices from the yogurt.

2. Meanwhile dice cucumber, crush garlic and chop mint ready forthe yogurt.

3. Place yogurt into a bowl with cucumber, mint, garlic, lemon juice, zest and olive oil. Season to taste mix well. Place Tzatziki into the refrigerator for half hour. 
Ready to serve.
