Veal Potato and Pumpkin Croquettes

MIXTURE MAKES 15-18 CROQUETTES

350g potatoes cubed
250g pumpkin cubed

300g diced veal
1 red chilli
2 cloves garlic
10 fresh basil leaves
1/2 tsp thyme
4 spring onions roughly chopped
salt and pepper
1 cup breadcrumbs
1 egg yolk

Crumbing
1/4 cup flour
1 egg and 1/4 cup milk
1 1/2 cups breadcrumbs

oil for frying

Nuts & Bolts

1. In a pot add cold water, potatoes and pumpkin bring to the boil and cook until vegetables are soft. Drain water and mash vegetables. Set aside for later.

2. In a food processor add veal, spring onions, chilli, garlic, basil and thyme, blend until all mixed.

3. Add blended mixture to the mashed potato and pumpkin. Add bread crumbs, egg yolk and season to taste. Mix well.

MIXTURE WILL BE STICKY AND SOFT HANDLE WITH CARE

Set out three bowls one with flour
one with egg and milk
one with breadcrumbs
Using a spoon scoop some of the mixture and place it into the flour roll around in flour shaping croquette with your hands. Dust off any excess flour. Roll in egg wash, then roll in crumbs. Place on a board and repeat the process until all mixture has been used.
