Chicken Cacciatore
Serves 4
1tbs olive oil
550g chicken thigh diced
200g mushrooms sliced
1 brown onion finely chopped
2 tsp paprika
1 tsp dried oregano
2 garlic cloves crushed
1/3 cup dry white wine
400g can diced tomatoes
1 tbs balsamic vinegar
2 tbs chopped fresh basil leaves
1 sprig thyme
1 tbs brown sugar
1/2 red chilli finely sliced
salt and pepper
Nuts & Bolts
1. In a medium size pot on medium heat add oil, onion, chilli and garlic cook for 4 minutes or until onion is soft.
2. Add mushrooms, thyme and basil and cook for 2 minutes.
3. Add wine, paprika, dried oregano balsamic vinegar and brown sugar and cook for 1 minute,
4. Add chicken and cook for 4-5 minutes. Add tomatoes season to taste and turn heat down to medium- low and simmer for 15-20 minutes.
