Chicken Dumplings
Serves 4
400g chicken thigh diced
1/3 cup fresh parsley
1 red chilli
2 cloves garlic
1 tbs Dijon mustard
1/2 lemon juiced
1/3 cup low fat cream
2 slices multi grain bread
2 spring onions ( green part )
salt and pepper

1. Using a food processor place all ingredient in and blend well.
2. Once mixed, using two teaspoons scoop out mixture into small balls and add to your soup stock. Once dumplings have risen to the surface give them another minute or until cook all the way through.
Dumplings can be used in most stocks
