Chicken Scallopini

Serves 4

4 - 6 chicken thigh fillets

1 tbs olive oil
salt and pepper

1 tbs butter
1 tbs olive oil
500g sliced mushrooms
pinch cracked pepper
2 tbs Port
1/4 cup white wine
1/4 cup chicken stock
1/3 cup cream

Nuts & Bolts

1. In a large frying pan on high heat add oil and chicken thigh fillets, cook on each side for 3 minutes. Remove from pan and set aside.

2. Using the same pan on medium heat, add butter, oil and mushrooms, cook for 4-5 minutes. add port and white wine and reduce the liquid by half.

3. Add pepper, chicken stock and cream. Reduce heat to low and simmer for 2 minutes.

4. Return cooked chicken thigh fillets and any chicken juices. Coat chicken in the sauce. Cook sauce and chicken for a further 3-4 minutes or until the chicken is cooked all the way to the center, and sauce has thickened slightly.
