French Onion Chicken
Serves 4
1 tbs olive oil
1 tbs butter
2 large onions sliced
2 cloves garlic finely chopped
1 red chilli finely sliced
600g chicken thigh fillets
4 sprigs thyme
1 cup chicken stock
120g melting cheese

1. In a large skillet on high heat add 1/2 tbs oil and chicken thighs, cook on skin side for 3-4 minutes or until golden in colour. Remove from skillet, and set aside for later.
2. In the same skillet on medium heat add remaining oil, butter, onions, chilli, thyme and garlic cook for 8 minutes or until onions have caramelized.
3. Add chicken stock and mix well. Return chicken thigh pieces. reduce heat to low and simmer for 15 minutes.
4. Place cheese on top of chicken pieces and melt.
