Turkey meatballs in Tomato Sauce
Serves 4
400g Turkey mince
1 tbs crushed garlic
1 tbs ginger
1 tbs chilli paste
1/4 cup fresh parsley finely chopped
1 tsp dried oregano
1/3 cup bread crumbs
salt and pepper
1. In a mixing bowl add all ingredients and mix well. Roll mixture into bite size balls, place on a plate. Cover with cling wrap and refrigerate for 2 hours.
Tomato Sauce
1/2 tbs Olive oil
1 red onion finely sliced
2 cloves of garlic
1/2 red chilli
2 sprigs thyme
400g tin diced tomatoes
1/2 tsp dried oregano
1/4 cup fresh basil roughly chopped
50 ml water
salt and pepper
Nuts & Bolts
1. In a frying pan on medium heat add oil, onion, chilli and garlic cook for 5 minutes.
2. Add tomatoes, thyme, oregano, basil, water and season to taste. Simmer for 15 minutes.
3. Whilst sauce is simmering, in a separate pan add 1/2 tbs olive oil and meat balls. Cook for 8 minutes frequently moving meatballs around.
4. Remove meatballs from pan and add them to the sauce. Stirring meatballs into sauce. Simmer for a further 5-7 minutes.
