Chilli Oil

Delicious infused flavorsome chilli oil to enhance  extra flavour in your recipes.

 

350ml peanut oil

2 thumb pieces of fresh ginger

2 star anise

1 small cinnamon stick

3 cloves garlic

1 bay leaf

5 - 6 dried chilies

1 tbs pink peppercorns

1 tsp black peppercorns

5 tbs chilli flakes

1 tbs chilli powder

1 tsp salt

1. In a heavy base pot on a low heat, add oil, ginger, star anise, cinnamon stick, garlic, bay leaf, dried chilies and peppercorns. Heat on low heat for 25 minutes to infuse all the flavours in the oil. (Don't let oil boil).

2. In a heat proof bowl add chilli flakes, chilli powder and salt. Strain oil through strainer and discard contents in the bin. Pour infused oil over the top of chilli and mix well.

3. Store in a sterilized jar with lid. Until use.
