Crispy Skin Salmon with lemon & Basil Vinaigrette

Cooking crispy skin salmon

Score the skin of the salmon. Season both sides with salt and freshly ground black pepper. Heat a large nonstick pan over medium-high heat.

Add the olive oil and gently place the salmon into the pan, skin-side down. Cook for 5-6 minutes, turning once. Remove the fish to rest on a plate for 2-3 minutes.

Lemon & Basil Vinaigrette

2 tbs basil infused olive oil

1 tbs lemon juice

salt and pepper

1/4 tsp dried oregano

1. Place all the ingredients into a jar and give a good shake. Pour over salmon.
