Tomato Basil & Fire Roasted Capsicum Bruschetta
Delicious Brunch or Snack
SERVES 4 PEOPLE
4 x 1 inch thick slices of bread
2 large tomatoes roughly chopped
100g fire roasted capsicum finely sliced
1/3 cup fresh chopped basil
1 clove garlic crushed
1 tbs olive oil
1/2 tbs balsamic vinegar
Season to taste
100g spring onion and chive cream cheese ( room temperature easier to spread)
1 whole clove of garlic
1. Combine tomatoes, capsicum, basil, crushed garlic olive oil, balsamic vinegar and season to taste.
2. Toast bread, whilst the bread is still warm rub the clove of garlic all over each slice of bread.
3. Divide the cream cheese into four portions and spread over the top of each slice.
4. Divide the tomato and capsicum mixture into four portions and place on top of each slice of bread.
( optional drizzle with extra olive oil )
Ready to eat.
