Bean and Corn Salad
SERVES 4 PEOPLE
DRESSING
1 heaped tbs Dijon mustard
1 tbs white wine vinegar
pinch salt
pinch pepper
3/4 cup olive oil
3 tbs pecorino grated cheese
SALAD
1 can white beans
1 can corn
1/2 red onion finely sliced
1 red capsicum finely chopped
1/4 cup fresh parsley finely chopped
1. In a mixing bowl add white wine vinegar, mustard and salt and pepper, mix . Add olive oil and combine together. Mix in pecorino cheese. Add more seasoning if required.
2. Add all the salad ingredient to the dressing and combine all together. Cover and refrigerate for 30 minutes, so as all the flavours combine together.
