Garlic and Rosemary Lamb
Marinade
1 sprig thyme
1 sprig rosemary
1/3 cup fresh parsley finely chopped
3 tbs olive oil
3 cloves garlic crushed
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp dried oregano
Zest and juice of 1 lemon
10 small sprigs of rosemary and 2 cloves of garlic cut into pieces
Nuts & Bolts
1. Add all ingredients into a bowl and mix well.
2. Rub marinade all over the lamb roast. Make some slits all over the roast and insert a rosemary sprig and a piece of garlic. Cover with cling wrap and refrigerate over night.
Lamb cooking time : 180c 20-25 minutes per each 500g of meat.
With all meat remember to rest the meat before carving.
