Grilled Prawns With Bean and Mango Salsa
400g prawns
1 clove garlic crushed
1 tsp dried oregano
1 tbp olive oil
1/2 chilli finely sliced
500g cooked broad beans
2 medium tomatoes diced
1/2 mango diced
1 small red onion finely chopped
1/4 cup fresh mint chopped
1/4 cup fresh parsley chopped
1/3 cup fresh coriander chopped
Dressing
2 tbs olive oil
1- 1/2 tbs lemon juice
1/2 red chilli finely sliced
1 clove garlic crushed
1 small piece grated ginger
Nuts & Bolts
1. Place prawns in a bowl with garlic, olive oil, oregano and chilli mix well. Marinate for 15 minutes before cooking.
2. Meanwhile in a bowl add, beans, tomatoes, mango red onion, mint, parsley and coriander and mix.
3. In a pan cook prawns on medium heat for 2 minutes on each side or until cooked.
4. Dress salad place on a serving plate and add prawns.
