Prawn and Fish Kebabs

700g fish cut into cubes
12 large prawns
wooden skewers
olive oil for cooking

Marinade
1 tbs lemongrass paste
1 tbs fresh garlic crushed
juice of 1 lime
1 tsp sesame oil
1/4 cup fresh parsley finely chopped
3 sprigs thyme finely chopped
salt and pepper

Nuts & Bolts

1. In a large mixing bowl add all the marinade ingredients and mix well.

2. Add fish pieces and prawns, coat all seafood with marinade, cover with cling film and refrigerate for 30 minutes.

3. Using wooden skewers place fish and prawns on to skewers.
For extra flavor add onion, tomatoes, lemon, prosciutto in between fish and prawns.

4. In a large frying pan on medium - high heat add oil and in batches cook kebabs. Cook for 1-2 minutes on each side, or until seafood is cooked.

Great on the BBQ.
