Prawn Saganaki

400gms raw prawns, shelled, deveined and tails left on
1/4 cup olive oil
1 red onion finely sliced
1 red chilli finely sliced
3 gloves garlic finely chopped
2 tbsp ouzo
2 tsp brown sugar
1 can diced tomatoes
3 spring onions finely slice
1/4 cup flat leaf parsley
1/3 cup dill
Salt & Pepper
lemon zest and juice from 1/2 a lemon
150gms Greek feta cheese

Nuts & Bolts

1. Heat oil on medium heat in a large deep frying pan. Add onions, garlic and chilli cook until soft and translucent.
2. Add prawns and cook for a few minutes. 
3. Add tomatoes, ouzo, parsley, dill, brown sugar, lemon zest, juice and salt and pepper to taste. Bring to the boil, once reached boiling point turn down to a medium heat, and cook for a further 5 mins.
4. Transfer the Saganaki mixture to a oven safe bowl, sprinkle feta cheese on the top, place under grill until feta has melted into the sauce.
