Spicy Ribs
Enough rub for 3 large pork ribs
Please note : these ribs require a 2 step marinating process
Step 1 place dry rub all over ribs
3 tbs brown sugar
1 tbs pimenton
1/4 tsp cayenne pepper
2 tsp onion salt
3 tsp salt
1 tsp fennel powder
1 tsp kashmiri chilli powder
1. Place all ingredients into a jar and mix well.
2. Rub marinade all over ribs, cover and refrigerate overnight for a great result.
3. Preheat oven to 180c.
4. Wrap ribs up in foil, place on baking tray, and place ribs in the oven cook for 2 1/2 hour.
5. Remove ribs from foil and lay on baking tray. Using a pastry brush lather the second marinade all over the ribs. Place in the oven and cook for 10 minutes. repeat this process with the second marinate 3 times.
6. remove from oven after the third basting. Rest for 4-5 minutes, then cut ribs into there bite size pieces.
Second Marinade
1/3 cup kecap manis ( sweet thick soy sauce)
3 tbs honey
1/2 tbs garlic paste
2 tbs Sriracha HOT chilli sauce
Place all the ingredients into a jar and mix well
