Fattoush
Serves 4-6
1 cucumber diced
3 tomatoes diced
1 small red onion finely chopped
1/4 cup fresh chopped mint
1 cup fresh continental parsley chopped
1/2 cup fresh celery leaves chopped
2 toasted pitta bread, broken up into pieces
1 small clove garlic finely chopped
1/2 red chilli finely chopped
Dressing
juice of 1 to 2 lemons
1 tbs olive oil
1/4 tsp sumac
season to taste
Nuts & Bolts
1. In a large frying pan cook pitta bread for 2-3 minutes on each side or until hard and crispy. Set aside for later.
2. In a large mixing bowl add all ingredients and mix well. Break up the pitta bread with your hands and mix into salad.
3. Mix dressing ingredients together, pour over salad and mix well.
