Mandarin Asian Salad

Serves 4

1/2 red chilli finely sliced
1 red capsicum finely sliced
3 carrots finely sliced
1 cucumber finely sliced
1/2 bunch fresh coriander roughly chopped
4 spring onions finely sliced
3 mandarins peeled and sectioned
1/3 cup crushed cashews

Dressing
4 tsp sesame oil
3 tsp fish sauce
juice of 1 lime
1/2 glove garlic finely crushed
2 tbs fresh coriander roots finely chopped
2 tsp palm sugar
pepper for seasoning

Nuts & Bolts

1. In a mixing bowl add all the salad ingredients ( leave the cashews for later).

2. In a jar with lid add all the dressing ingredients. Place the lid on the jar and shake well.
Dress salad with dressing mix well. Sprinkle cashews over the top of salad.
