Lemongrass Chicken
Serves 4
600g Chicken thighs diced
1/2 Stalk of lemongrass (using only bottom white part) finely sliced
3 Cloves garlic finely diced
1 red chilli finely diced
1/2 tbs fresh ginger finely chopped
2 tbs rice brand oil
3 spring onions ( green part ) sliced thin
Sauce
1 tbs Fish sauce
3 tbs honey
1-1/2 tbs light soy sauce
1/4 tsp Black pepper
Nuts & Bolts
1. In a small mixing bowl, add all sauce ingredients into a bowl and whisk. Set aside.
2. Heat a wok on high heat add chicken and cook for 5 minutes.
3. Add lemongrass, garlic, chilli and ginger into wok. Stir fry for 2 to 3 minutes or until all the vegetables are soften and you can smell beautiful aroma.
4. Add in sauce mixture and spring onions, stir fry until sauce has thicken and chicken is coated evenly with sauce, about 1 minute. Remove from heat.
