Chirizo and Lentil Stew

SERVES 3-4 PEOPLE

 

1 tbs olive oil

1 chirizo sausage sliced

1 medium onion sliced

1 clove garlic finely diced

1 tsp pimenton

1 tsp cumin

1/4 tsp turmeric

1 tsp kashmiri chilli powder

1/2 tsp dried oregano

1/4 tsp black pepper

1/2 tsp salt

400g crushed tomatoes

200ml water

1 tbs honey

400g can lentils

1 tbs lemon juice

1. Using a medium size pan on medium heat add oil and chirizo sausage, cook for 3-4 minutes. Add onion, garlic, cook for 4 minutes.

2. Add  dried oregano and spices, mix well. Cook for 1-2 minutes. Add tomatoes, water and honey, cook for 8 minutes.

3. Reduce heat down to a simmer. Add lentils and lemon juice. Simmer for 15-20 minutes.

4. Season to taste. Ready to serve.
