Mushroom and White Wine Gravy

4 SERVES

 

 

1 tbs butter

1 tbs olive oil

1 tsp crushed garlic

1 large shallot finely chopped

150g button mushrooms chopped

100g shiitake mushrooms cut in half

150g oyster mushrooms left whole

3 sprigs fresh thyme

1/4 tsp black pepper

1/2 tsp salt

1/2 cup white wine

150ml chicken stock

1 tsp plain flour

1/3 cup cream

1. Using a large frying pan, on med-high heat add butter, oil, shallot and garlic, cook for 2-3 minutes. 

2. Turn heat to high, add all mushrooms and thyme,cook for 8 minutes. Add pepper, salt, white wine, cook until wine has reduced by half. Add chicken stock  and flour, stir until thickened. Turn heat to medium heat, add cream and cook for a further 2 minutes.

Ready to serve with your choice of steak, lamb, chicken or schnitzel
